Ginger-flavored Tofu Hamburger with Soy Sauce

Silken (soft) tofu 200 g [200g]
Minced chicken meat 100 g [100g]
Sesame oil 1 tbsp(s) [13.5g]
Soft-boiled egg 2 piece(s) [100g]

KIKKOMAN Less Salt Soy Sauce 2 tsp(s) [11.3g]
Grated ginger root(shoga) 1 tsp(s) [5g]
Potato starch 2 tbsp(s) [36g]

KIKKOMAN Less Salt Soy SauceĀ  1 tbsp(s) [17g]
Mirin 1 tbsp(s) [17.6g]
Sake(cooking sake) 1 tbsp(s) [15g]
Negi/Japanese long onion 10 g [10g]
Grated ginger root(shoga) 1 tsp(s) [5g]
Grated garlic a small amount [3g]
Chilli pepper 1 piece(s) [400g]
Water 3 tbsp(s) [45g]
  1. Wrap the soft tofu in paper towel, place into a lidded heat-safe container and microwave (600W) for 3~4 minutes, then drain, replace the paper towel and allow to cool.
  2. Place the minced meat and (1) into a bowl, add in (A), combine well, separate into 2 equal portions, and form into patties.
  3. Place a small amount of sesame oil on your hands to make forming patties easier.
  4. Heat the sesame oil in a fry pan and cook (2). Once browned, flip over to brown on both sides. Add in 50 ml of water, cover with a lid and braise for 5 minutes, then serve onto plates.
  5. Pour (B) into the fry pan from (3) and boil down until slightly thickened.
  6. Place a soft-boiled egg on top of the hamburger, pour on the sauce from (4) and garnish with your vegetables of choice.
